We’re extremely fortunate to work with Ilse Van Staden, our one and only butcher. Ilse is a highly skilled and dedicated butcher with a deep passion for quality meat, particularly beef. She is based at Ballylagan Organic Farm Shop and is part of the award-winning KeNako Biltong team.

Ilse’s knowledge, care and attention to detail have been invaluable, helping ensure our beef is handled with the respect it deserves and finished to the highest possible standard.
