Tallow chocolate fudge

These are perfect as a small sweet bite with coffee, or served after dinner. The tallow adds a gentle richness that carries the chocolate and softens the sweetness.

Rich, simple and deeply satisfying. This fudge is made with good chocolate and clean tallow, giving a smooth texture and a depth of flavour without any hint of beefiness.

Ingredients:

  • 200g dark chocolate
  • 2 tbsp beef tallow, melted
  • 120ml cream
  • 2–3 tbsp honey
  • Pinch of salt
  • 1 tsp vanilla extract (optional)
  • Zest of 1 orange or a few drops peppermint oil (optional)

Instructions:

  1. Gently heat the cream
    Warm the cream in a saucepan until just steaming. Do not boil.
  2. Melt the chocolate
    Remove from the heat and add the chopped chocolate.
    Let it sit for a minute, then stir until smooth.
  3. Add the tallow and flavourings
    Stir in the melted tallow until fully incorporated.
    Add the honey, salt and any flavourings.
  4. Sprinkle with seasalt, chopped nuts or even colourful sprinkles.
  5. Set the fudge
    Pour into a lined tin or moulds and smooth the top.
  6. Chill and finish
    Refrigerate for 2–3 hours until firm.
    Allow to come slightly to room temperature before cutting or serving.
